Towards the bottom of the instrument panel, does anybody know what "EV" stands for?

And as a follow-up, assuming it stands for "Electric Vehicle", how is this different from switching to EV Mode?

The EV indicator shows when the battery is active and the engine is off. The driver doesn’t need to initiate anything for this to occur. Such as when coasting or braking or starting slowly from a stop.

EV mode is initiated by the driver and keeps the car in electric mode if possible.
